Wait until they start charging or break formation before engaging them with a melee weapon. It's very possible to ride in circles around the approaching enemy formation, firing into the largest mass of men, without any of them being able to hit you. The enemy's marksmen will seem to have great accuracy if you stand still, but they're terrible at hitting moving targets, so always try to be moving parallel with the enemy's line. An army made up of plain marksmen and spearmen is going to be a lot easier than a group of winged hussars and Scottish swordsmen. Look at an enemy's army makeup before attacking.

In terms of actually winning battles, look up techniques for how to effectively use commands instead of letting your troops all charge at the enemy at the beginning of the battle. Wait for the battle to end and swoop in to attack the winner, who should be substantially weakened (and have plenty of prisoners). In terms of defeating lords, one option is to hang around a battle between two lords (preferably of factions that already dislike you).

If you have a full party, don't feel bad about releasing bad or wounded soldiers to replace them with better soldiers freed from a defeated lord. The easiest source of men at this time is mercenary camps, but you can get better soldiers by taking prisoners from a lord with a lot of captives. Most units only have one available promotion. I'm not sure if you've played the first Mount & Blade or Warband, but WFaS is different in that you can't raise someone from a peasant to a knight. Since you don't have many available units, it's important to make them of as high quality as possible. Some of the special quests in WFaS have large experience rewards which are meaningful at lower levels, so ask any and all lords for tasks and special quests. Gaining experience is possible by killing a lot of enemy soldiers (guns are a fun addition, but the easiest way to get a lot of kills is just riding around on your horse slashing enemies in the back) or by completing quests. The easiest way to get renown is to fight difficult battles (where the enemy has more troops than you). In addition to being able to increase your party size with charisma and leadership, each 25 renown gives you another party member (it might be a different figure in WFaS, but it definitely increases party size). Renown is pretty slow at first in With Fire and Sword (slower than Warband, I think), but it will start to add up quickly as you start fighting more battles.
